Let’s talk about how I am obsessed with these Funfetti Muffins. They’re adorable, and they taste great. I made them and shared them with my mom and grandma, introducing them to my new favorite muffins.

Pete really liked them too. I mean, how could you not?

They’re using the same technique as our carrot cake muffins and our lemon muffins, if you’ve used our recipes for those before. If you haven’t, well, no worries. Just follow this recipe. You’ll love it. Trust me.

The best part about this recipe is that it’s Funfetti muffins with cake mix. If you don’t have a box of Funfetti cake mix, don’t worry. You can get a recipe for that at the end of this post and make this from scratch.

But, if you use the box mix, this is an easy three ingredient recipe.

Preheat the oven to 350 F.

Put the cake mix in a bowl.

Pour in the water.

Add the yogurt.

Stir until combined.

Small aside: When you’re mixing this Funfetti Muffins batter, be sure to mix very carefully. If you mix too quickly (or use a hand or stand mixer), you have a very good chance of getting the colors of the sprinkles all over the white batter. If the colors run, you won’t end up with a very pretty muffin at the end.

Fill each cavity of a 24 cup mini muffin pan about 3/4 of the way full.

Bake about 14 minutes until a toothpick comes out clean. Subsequent batches will cook a little less (about 12 minutes).

This recipe will make two batches of Funfetti mini muffins, so you could either use two mini muffin pans, or you can bake a second batch. If you go with a second batch, it may bake quicker than your first batch did. So be sure to keep an eye on it.

What is Funfetti?

Funfetti is Pillsbury’s trademarked (I assume) cake variety. Funfetti, as a word, is a combination of fun and confetti because the cake mix is filled with edible confetti and it’s … fun.

Other brands have come up with similar cake mixes, like confetti cake mix. That would work in this Funfetti Muffins (aka confetti muffins) recipe.

Can you make homemade funfetti mix?

The short answer: yes.

Okay. So now, the how. Funfetti cake mix is actually just white cake mix with multicolored sprinkles mixed in. And luckily, you can buy multicolored sprinkles online.

Sprinkle a generous amount of the sprinkles into your cake mix and you’re ready to bake.

If you don’t feel like ordering sprinkles online, that’s fine. You can use regular (long, tube shaped) sprinkles instead.

I haven’t tried them, but I think you could use those tiny nonpareils sprinkles as well. I just think that because they’re so small and have so many colors, all the colors may bleed together and your muffins won’t end up as pretty as you would like them to be.

How many Weight Watchers points are Funfetti Weight Watchers Muffins?

This recipe started as a WW recipe, basically Weight Watchers cupcakes with yogurt and no icing. So just a quick calculation on the points.

The Funfetti cake mix is 64 points. The yogurt is 4 points. So 68 points divided by 48 is 1.4 points — so round up to 1.5 Freestyle points. Most programs won’t allow you to record half points, so eat 2 for 3 points.

If you using myWW Smartpoints, these are 2 myWW Smartpoints on the myWW Blue Plan, myWW Green Plan, and myWW Purple Plan.

Of course, be sure to double check the points in your WW app or calculator before adding them to your day.

Also, if you’re making your own funfetti mix (as described above) instead of using a pre-made cake mix, don’t forget to include the points for the cake mix andthe points for the sprinkles when you’re adding up the points for these. Since the sprinkles aren’t originally in your cake mix, your points per muffin will be more than just calculating cake mix, yogurt, and water.

And that means you’ll actually have to measure out how many sprinkles you add to your homemade funfetti mix. That’s the only accurate way you can calculate your points. That seems like a bit of a pain in the neck, and it might just be easier to use pre-made cake mix if you’re counting Weight Watchers points.

Can you use a different kind of yogurt in these Funfetti Muffins?

You can change up the flavor of the yogurt in these Funfetti Muffins. Personally, I like using vanilla yogurt because it’s white. Some other yogurts, like strawberry, have food coloring in them (or are naturally colored because of the fruit). And that coloring takes away from the sprinkles in the funfetti mix.

If you’re concerned about Weight Watchers points, as many readers who find these muffins are, then you want to make sure you only use 100 calorie yogurt in this Funfetti recipe. That will keep the points as they are listed in this post.

If you’re not concerned about Weight Watchers points, you can use any flavor and calorie-count yogurt you prefer. I’ve made these with full-fat yogurt many times and they’ve always come out delicious.

However, I wouldn’t use Greek yogurt in these.

I really like Greek yogurt and use it all the time, like in our 2 Ingredient Dough. Regular yogurt is more watery than Greek yogurt because the whey is left behind.

Fun fact: Removing the whey is the basic difference between the two. Because Greek yogurt lacks the whey that regular yogurt has, Greek yogurt is a lot more dense than regular yogurt. And in this Funfetti Muffins recipe, where your goal is a light and fluffy muffin, a dense Greek yogurt might not work as well.

I haven’t tried to makes these Weight Watchers Funfetti cupcakes with Greek yogurt, though, so I can’t tell you exactly how they’ll turn out. So if you do try Greek yogurt, be sure to leave us a comment below and we’ll be sure to update this post.
