Crustless Tuna Quiche

Tuna is an easy way to get some fish into the kids diets without too much of a fuss. I started out making these Tuna muffins and went from there. Now the kids are pretty good with Tuna and so I use it more often.

If your kids are not used to Tuna or it’s not their favorite food ever, you can start by adding a quarter of the amount of tuna and then work up from there, it gets them used to the taste and is easier than going full steam ahead and being left with uneaten food and then you know….being forced to eat it all yourself….:)

This quiche used a basic quiche recipe and then I’ve added in some sweet red bell pepper, which I’ve grated. You don’t have to grate your pepper, you could slice it into very thin strips and it would work just fine.

I’ve grated mine as it’s looks ‘less’ and can be less intimidating for little ones. You don’t need to cook it beforehand if it’s grated or sliced very thinly either, the eggy quiche tuna mixture will cook it while the quiche is cooking.

I’ve made this as a crustless quiche, you can use a wholemeal pie crust if you like to, it doesn’t need it and holds itself together really well with or without a pie crust. The pastry is easy enough to make if you want to though.

I like to add a square of this to the kids lunchboxes sometimes, once it’s been refrigerated it firms up really well and you can cut it into pieces to wrap for lunchboxes. You can reheat this quickly in the microwave if you prefer it hot, my lot seem to prefer it cold for lunches.

This recipe is smaller than I usually make for quiches, so if you want a bigger quiche just multiply the ingredient list.

What’s The Best Tuna To Buy?

Tuna’s a bit of a tough one when it comes to knowing what to buy. I always go for Dolphin friendly canned Tuna, but I also try to find brands that go beyond this and follow Responsible fishing practices and of course always check the labels as sometimes brands will add other ‘things’ that I don’t want to be in the tin!

Brands are also pretty vague about exactly how the Tuna is caught sometimes, for example what does ‘line caught’ actually mean? To me it sounds kinds okay, but it means the fish are not caught in nets and their caught using a hook. Hook caught sounds worse than line caught, right?

If the welfare and sustainability of fish is important to you. it’s worth spending a few minutes researching what all the terms mean and finding a brand you’re comfortable with.

Is Tuna Healthy?

Yes! The ‘right’ canned Tuna (see above!) is great. It’s high protein and contains many vitamins and minerals such as B vitamins and Vitamins A and D. It’s also an Iron source and has Omega 3 essential fatty acids. Which is why I was keen to get the kids into eating it!

Storing This Quiche

Either eat this quiche once its cooked and cooled slightly or store in in the fridge for up to 2 days. Keeping the quiche in the fridge means it’ll firm up really well and it’s then easy to cut up into pieces for lunches. I cover mine with food wrap and it stays good for a couple of days.

Variations

Here’s some variations you could make to this quiche:

  • Mini quiches – If you happen to have some cute mini quiche pans you could turn this into mini quiches. If you’re going to do this I think a pie crust would be a good addition
  • Muffin pan – If you don’t have mini quiche tins you could always use a well greased muffin pan, in which case I wouldn’t use a pie crust!
  • Mozzarella – Replace the Cheddar cheese with Mozzarella for a less ‘cheesy’ quiche. Quantities remain the same
  • Goats cheese – Use Goat cheese if you like it, it works well with Tuna
  • Fresh tomatoes – Add a couple of thinly slices fresh tomatoes (uncooked) to the top of the quiche for some more goodness!
  • Carrot – Replace (or in addition to!) the red pepper with 2 peeled and grated carrots if your kids aren’t keen on peppers

How To Make Crustless Tuna Quiche

Ingredients

  • 1Small tin ofTunaDrained and rinsed
  • 3LargeEggsLightly whisked
  • 1Red pepperWashed and grated
  • ¾CupCheddar cheeseGrated
  • ½CupHeavy cream
  • Salt and black pepperTo season
  • Olive oilTo grease the quiche tin

Instructions

  • Heat your oven to 210 c or 400c and let it heat up fully. Prepare your pie plate, baking tin or whatever you’re going to cook your quiche in by oiling it with a little olive oil
  • In a large bowl, add the eggs and lightly whisk them
  • Add the heavy cream to the eggs and combine together and then season well with the salt and pepper then stir through the cheese
  • Grate your red pepper and add it to the quiche mix
  • Drain your Tuna and rinse it. I use a small sieve and run the Tuna under cold water. Get as much of the water off it as you can and then use your fingers to flake it into smaller pieces if it needs it. Add it to the quiche mix
  • Pour the mixture into the quiche pan and bake in your hot oven for 25-30 minutes
  • The quiche should be slightly ‘wobbly’ when it comes out but almost firm. It will firm up as it cools and the eggs and cheese set
  • Leave it in the baking pan while it firms up and then serve. Use a sharp knife to get a clean cut
